I discovered these delicious little crunchy cookies at Christmas this year. They are easy and so, so good. Not terribly sweet, but sweet enough. Perfect with a cup of coffee, tea, milk, water, diet coke, orange juice, whiskey ... you get the picture.
1 c. unsalted butter (if salted, reduce salt by 1/4 tsp.)
1 c. powdered sugar
3/4 tsp almond extract
1/2 tsp salt
2 c. flour
1 T orange zest (about 1 large orange)
2/3 cup sliced almonds (toasted is best)
1/3 c. dried cranberries
Coarse sugar (optional)
Mix butter, sugar and extract. Add flour, salt and orange zest until combined. Gently mix in cranberries and almonds.
Place dough on a piece of cling wrap and form into a log. Refrigerate for a couple hours, until firm.
Cut into 1/4" slices, place on greased, or parchment lined pan. Bake at 325 degrees for 14 minutes, or until edges just start to turn golden. Let them cool on a baking sheet for a few minutes, until set.
*Sprinkle coarse sugar on top to give a little extra sweetness. For lots of extra sweetness, glaze after they are cooled.
Orange Glaze
3/4 powdered sugar
juice of 1/2 orange
teaspoon or so of melted butter
