This one comes right off the back of the Old El Paso Red Enchilada Sauce can. I use a bit more meat and double the cheese, because everything is better with more cheese. It is a go-to meal at our house, when I want to make something quick and easy.
1 1/4 lb ground beef (1 lb is fine, my family likes them a little meatier)
2 cans (10 oz) Old El Paso enchilada sauce
3 cups shredded cheddar cheese
8 medium sized flour tortillas
Preheat oven to 350 degrees.
Brown ground beef, drain grease. Add 3/4 cup enchilada sauce and 1 cup cheddar cheese to the meat.
Spray a 9 x 13 baking dish (remember to do this!)
Spoon some of the meat mixture into a tortilla, roll it and place seam side down in baking dish. Repeat until the meat is gone. I get about 8 tortillas total.
Pour remaining enchilada sauce on top, then sprinkle with 2 cups shredded cheddar cheese.
Bake for 25 - 30 minutes.
Serve plain or with whatever toppings sound good!
